
The name of the new restaurant at Hotel 540 came from the region’s geography, according to the hotel’s general manager.
Bryan Pilbeam says the new restaurant called ‘Cordo’ comes from the Spanish word ‘Cordillera’ which is a chain of mountain ranges.
“It’s going to be an upscale restaurant but nowhere near pretentious,” he said. “It’s something that people can go to regularly and not be the Valentine’s Day or the special occasion – certainly it’ll be worthy of that but not necessarily that niche.”
“Delta as a brand is really looking at the streamlined traveller so those people that want upscale but nothing fluffy over the top that they don’t need.”
The 90-seat restaurant and 25-seat wine bar will replace the formerly-named Blue Dining + Lounge.
“It represents the geography, coniferous trees, sagebrush all those things that we love about our area and Cordo is the one that just jumped out at us,” Cordo added.
“It was the name that we started working with and we really liked it.”
Pillbeam says the renovation worth more than $8 million dollars to revamp the hotel is expected to be done around April 16.
